Fish 2 Ways: Fried and Steamed.

Dinner today -> Fish 2 Ways.
I got this frozen fish from T&T a couple weeks ago.  I don't know what kind it is, but it's very similar to a skate wing.  I defrosted it and cooked it 2 ways in 1 pan.  I pan fried the bottom, while steaming the top.  I only added oyster sauce, soy sauce, ginger powder, and olive oil.  I kept adding splashes of water to keep the sauce from burning and to keep the steam thick under the lid.  Cooked for 15 mins (might have been a bit too long?) and no flipping.

The white meat was very smooth and flaky.  This fish is probably perfect for deep frying.
