Bought a chunck of sale Sterling Silver Roast Beef today. Dry rubbed it and cooked it in the oven with some root vegetables.

I still need to get that meat thermometer, because I'm still guessing at when to take it out and slice it. It came out a well-medium. Not near bloody enough, but still good.
