I used Anikka Cheese Cake recipe to make 3 mini cherry cheese cakes tonight. It was fairly simple to make, except I don't have blender to mix the cream cheese and Cool Whip together. I had to do it by hand with a spoon and it was tiring. In the end, they look really good but the cheese cake filling part was a bit lumpy.
